Sago ( Sabakki in kannada, Sabu dana in marathi, Sabudana in Hindi, Javvarisi in Tamil, chowwary in malayalam ) is made from Topioca pearls. Tapioca is rich in carbohydrates, easily digested and releases energy quickly. It is largely used by people who perform fasting. It is given to small childrens as it is easily digested. There are other dishes like sabudana kchidi or pudding ( Kheer or pasayam ) prepared during festival occasions.

Sago flakes are made from best quality tapioca pearls. Sago flakes can be used for making instant pudding(kheer or pasayam), just take handfull of sago flakes add to a bowl of warm milk, add dried fruits ( kishmish, cashews etc.,) , sugar cardamom seed powder, kesar and stir. The pudding is ready to eat within one minute. This is not the same story with traditional process of making sabakki pudding, wherein you have to keep tapioca pearls to wet for 2 hours and then boil it and then prepare the pudding. Sago flakes are already boiled and roasted.
